The challenge of special diets – Paleo

The challenge: Prepare 2 weeks’ worth of meals for a family in which one member is gluten sensitive and is adapting the Paleo Diet to her evolving dietary needs, while still satisfying the other family members’ more traditional tastes.

Bolognese sauce over spaghetti squash or semolina pasta

Shepherds pie with pureed cauliflower topping instead of mashed potatoes

Turkey hash with sweet potatoes

Coconut-crusted chicken fingers
